Perfect Post Wedding Ceremony Treat

Summer – the perfect time to get married … but also the perfect time to get heatstroke!

Imagine your ceremony outdoors… it’s mid afternoon, you’ve just gotten married, you are off to take photos and it’s a couple of hours until your reception

The guests are standing around … getting all hot and bothered, some haven’t properly eaten for a while, everyone is congregating under the closest tree trying to get some shade. But it’s 32C anyway and the shade isn’t helping much

Summer may have officially ended here, but we know we still have months of warm, sunny days left

Which means it’s definitely still Poptail weather!

What’s a poptail you ask?

Well it’s both a cocktail with a popsicle in it as a garnish

We took over the new, chic inner city bar – Hyde Bar + Kitchen, on the first floor of Accor’s The Adnate Hotel and staged a series of looks with local beauty Amber, draped in clothes from WA businesses Shekki Swimwear, Ilka  (and their offshoot label Rosa Bridesmaids) and Hickey Hardware supplied by Eros

We recently took part in one of the collaborations of the year – a collaborative shoot with some of WA’s finest party vendors.

#Glamchella was the brainchild of party stylist Sassy Snap

Photoshoot by day, turning into real life 21st as the sun set over the Perth Hills – because really, why let such an amazing get up go to waste!

This “Coachella with Super Style” had features such as

Sampling Sessions: How to maximise your effectiveness

What kind of person are you? 

A) Totally organised, thought of every detail. Nothing gets passed you?

B) Fly by the skin of your teeth, make stuff up as you go along, give something a crack, learn and then do better next time.

Slightly frustratingly for me I am more of a “B” gal, which is why it’s really important for me to have lots of “A”‘s around me (even if they feel like they are running behind me, picking up the pieces as I forge ahead with another “great idea!”

I have to say, I did have a great idea – our Protein Pops – you may have heard me banging on about them but they really are good. Healthy, filling, fuel the body, filled with goodness. The “B” had the idea and the “A”s made it happen!

Enough about them though.

This is about Sampling Sessions, or really making the most of any market or event. 

Now that we have these deliciously, amazing Protein Pops… we need to get them into the hands of the people.

I think that they are the PERFECT snack to keep in your freezer and grab when you are too busy to eat properly (hello new mum, “old” mum, and social butterfly). 

So the strategy for us is to get these into Gyms and Cross fit Gyms and other fitness places (hit me up, ‘yo) as well as deliver them to the door via our online store

So I see lots of sampling sessions in my future – like the one we did at CAT FIT in Armadale. Which is great because we had such a fun time meeting people, getting their feedback, making connections and meeting other stallholders and sharing stories and helping each other grow.

As someone who goes into things a little unprepared, just to see how things go I am writing this for me, but also anyone else that is new to doing samplings.


Why do them?

Some of the main reasons are:

  • Builds your relationship with the store if you are going to be stocked there
  • Get direct customer feedback on the taste of your product
  • See how people react to your spiel about the product. What are the selling points they respond to the most
  • Collect contact information to build a continuing relationship
  • Brand building


Preparation before the day

  • Business Cards
  • Mailing list signup form + pen (or use ipad)
  • Write your Welcome Email and follow up sequence (if you can, or do immediately afterwards)
  • If selling, float and also electronic payment system (Paypal or Stripe)
  • Write and practice your “patter”
  • Samples – how will you serve and prep them
  • Need a helper
  • Set up, Signage and Presentation Items
  • Work with the store / venue to promote your session
  • Is there a competition you can run on the day to encourage sign ups to your list
  • Do you have stock to sell. Back up plan in case you run out
  • Can you offer a discount for purchases or promo
  • Logistics


Business Cards

Lots of people took cards and they were great to hand to other stall holders who kindly offered to hand on our details

Improvement: Rather than a general business card, a “Call to Action” card with details on where to buy the pops (website address), what we were selling and perhaps a discount voucher. 


Mailing List Sign Up Form

Name, email, address, phone number (maybe). Make sure people know they are being added to a mailing list and consent to receiving a email from you. 

Improvement: Would be even better to have an electronic form set up on an ipad so the customer can enter details immediately. Save on time inputting yourself, save on incorrectly inputting information and having to decipher handwriting. You could have your welcome email pre-written so that soon after the details are submitted online it triggers an email to be sent out (You would need an account with a CRM provider such as Mail Chimp, Active Campaign, Infusionsoft and the like) 


Welcome Email and Follow Up Sequence

You’d want to get this sent out asap.

Remind the customer that they signed up, be helpful, not overly salesy, provide value in some way, use great images. Perhaps offer a discount code, announce the winner of the competition you ran.

Write a compelling subject header. Using a person’s first name in the subject header has shown to increase open rates.

Have a follow up sequence scheduled. You don’t want to go over board but perhaps remind customers that haven’t purchased they only have a couple more days to use the code before it expires, and then remind them on the final day. 

Do some research into sending times and open rates and plan what time you send. For example luscious images of your food on a Friday afternoon around 1:30pm might peak some interest. 



Float / change plus change box or a bag. If you are using a box can you store it somewhere safely that you can access easily. 

Is your electronic payment system working? Can you log in, is your internet enabled on your device? Do you know the log in? Do you have a back up plan if something goes wrong?


Your “Patter”

Get comfortable with how you’ll get people’s attention quickly

Find the way that feels comfortable to you, but play around and see if you get better responses to one or the other. You’ve only got a couple of seconds to grab attention. 

Most people are pretty happy and open to trying free food. Woo! (be prepared, and don’t take it personally to someone who is a bit closed, awkward, or rude. It’s all part of it)

You’ll want to prepare and practice how to encapsulate what your product is, and educate and inform your customer during the tasting process and help them to purchase (or know where to purchase), how to enter the comp if you are running one, and also how and why to sign up to the list. 

You want to feel confident and natural and be succinct and friendly. 

Also use this time to ask questions, get honest feedback and see if you can work out who your idea customer is.



Duh.. that’s why we are here! Some food products are easier to serve and sample than others. In our case we had to organise freezers for storage, and we made mini versions of our mini pops as the regular size pops themselves were too hard to cut up. This was all prepped and labeled before hand and easily accessed on the day. 



Do you need a hand? Maybe with bumping in and out? A back up in case it gets busy? A bit of support.

I had Roxy (my right hand lady) come along with me on this first sampling session. I’ve had a bit of tiring time over the last few years (pregnancy and new baby) and with the fatigue came lack of confidence and out of practice. 

Having Roxy there was great because she’s the “A” to my “B” and had organised everything far better than I would have. Eek! But also I think sometimes we can be so emotionally wrapped up in our product that it can be hard to put ourselves out there and potentially face rejection. 

It was nice to have someone to “hold hands” with the first time, and definitely you’d need someone if things got busy, but I also felt confident that I could do a session by myself in the future too. There was nothing to be afraid of!


Set Up, Signage and Presentation Items

Do you need a table? How will you attract attention? Do you have any Marketing Point of Sale? Banners, Signboards etc

Business Card Holders? 

Menu Board so people know the flavours, or a way to display your products?

What space do you have to work with?

You should have your brand signage, but also do you have signage encouraging people to try a free sample.

Once you’ve spoken to them is there signage to prompt them about what they can purchase, the price and also the menu. 

Promote the Sampling Session prior to attending

Work with the Venue / Store to promote your session; for example on Social Media. Provide their SM Manager with a great image and blurb

Do some Instagram stories in the lead up or even as you are getting ready to head out.



Is there a competition you could run on the day? For example we gave away a pack of pops and told people if they wanted to sign up they would go into the raffle which would be drawn on the day and that they would also be mailed out a discount voucher to the online store. 

Most people were more than happy to leave their details.

Don’t be shy – ask.


Stock to Sell

In some cases you will just be sampling and other times you’ll have the opportunity to sell. 

If you are in a supermarket for example, be sure to be able to direct the customer as to which aisle they can find your product. 

If you are selling on the day, then guess how much stock you need (it’s anyone’s guess.. there are so many variables). Have a back up plan in case you run out. 

In our case then plan was to get customers to place an order with us through our online shop and pay via credit card. We could then deliver the product the following week. 

Promo Deals

How can you encourage people to buy on the day? Can you offer a discount, Buy 1-get-1-free? A value bundle. 

Improvement: I was thinking that for us we would have to deliver any orders made after the event. So that would be a cost to me. If someone wanted to purchase on the day and take away I could have had a “Buy Today 35% off” or want to buy later “we’ll send you a 25% discount code”

Something to consider. 



Make sure you know information such as

  • What time you will be sampling from – to
  • How much time you have to set up
  • Do you need power? Will you have power
  • Estimate of how many people will be coming to the event? Is this a true estimate?  This helps with working out if you need a helper, how many samples and stock to take


One the Day

Make connections

I’m not so great at this as I can be a bit shy and awkward (I think it comes off as snobbish but I don’t mean it to be!)

Connect with other stall holders – the other event we did, we met some really lovely business owners with amazing stories, and helpful advice who offered some great opportunities. Help each other out. 

Make sure you meet the organisers in person and thank them for their help etc etc… you know what to do. 


Be Confident and Charasmatic…

….charming, authentic, excited, informative, personable, well-presented, approachable, helpful … be you. 

Don’t be shy asking people to try a free sample. 

Don’t fear rejection. Use it as an experiment – turn it into a game. Can you change what you say slightly to get a better response. 



Create Content

On the day, can you create some insta stories or good SM images and find something interesting to blog about after (if that’s your thing)

Some ideas for content creation

  • Feature other stall holders; showcase their products, tell their story, share their advice
  • Testimonials from customers
  • Share the discount code with your Insta Stories viewers
  • Talk about the venue or store. Do a tour
  • Interview the owner / manger
  • Take your insta viewers through a tasting,  as if they were there
  • Fun snaps and boomerangs
  • Maybe run a separate comp and encourage people to come down if appropriate
  • Encourage others to post and tag you in their Insta Stories and then reshare their post. 

After the Sampling

Write down your lessons learnt – how can you do better next time?

Follow up with any additional opportunities

Add customers to the mailing list, send Welcome email and discount and schedule follow ups

Draw the competition winner and announce


Book another one in!

What a great weekend we had! 
Our first official taste testing of our Protein Pops went down a treat at the newly relaunched CAT FIT (Complete and Total Fitness) in Armadale.
To put it mildly, I am quite uncoordinated and over the years have shied away from most forms of exercise (which at nearly 40 I am really starting to regret!)
So suffice to say, I’ve never really been part of a gym crowd, but it was nice to meet such a lovely down to earth group of people, and I could really see the friendship and community vibe. Apart from the obvious benefits of regular exercise, it was such a social place to be. 
The timetable is packed full of HIIT sessions, Jungle Body classes with Mandy, Pilates on the weekend, kids classes .. plus other kinds of sessions I’m not knowledgeable enough to understand. In any case here is the timetable to check out for yourself. 
We didn’t just meet the fine folk of CAT FIT, but met some lovely fellow stallholders too – Like Empowering Chicks (100% of profits go towards educating girls in developing nations. $25 can send a girl in Uganda to school for a months. Such an inspiring business model – more on them later) and Akia Rose (such beautiful activewear…. inspired me to get active!).

What a fun day! Sampling our new Protein Pops and getting such a wonderful feedback. 
We ran a competition for someone to win a mixed box of flavours, and Charlotte was our winner. She was the perfect recipient in my mind – the kind of lady I had in mind when I created them. 
I had the idea for Protein Pops a couple of years ago “There doesn’t seem to be many delicious, simple, natural ingredient high protein desserts available – Protein Pops should be a thing!”
I’d another high protein ice cream that I wasn’t really impressed with “Sure it’s high in protein, but it tastes blah” and I thought “I can do better than that!”
But…. I didn’t do anything about it really.
Fast forward to having a baby, juggling a busy business, not much sleep, quite stressed.. in the first few months of being a mum I found I was fuelled by caffeine and donuts (not so great)
I needed these pops!
It took a lot of trial and error but we finally came up with a recipe that ticked our boxes (and the feedback from taste testers)
– tasted delicious 
– simple, natural ingredients (we use a base of bananas, coconut cream, cashews)
– icecreamy texture (as above and with some coconut oil – healthy fats)
– good macro split (we selected xylitol to keep the carbs/sugars down rather than using dates or a different sweetner)
– high quality protein (we used Boomers Whey – high quality, pure whey from a local business. Next stop we’ll be trialling a plant based protein)
Anyway.. ta da! Here they are.
Now I had a “smoothie” on a stick, portion controlled that requires no prep. No noisy blender to wake the baby … as of course the only time I could think about eating was when I’d finally put her to bed .
I could eat with one hand, while working or doing baby related stuff. I felt good afterwards and they were filling (one is a good snack, two equalled “lunch on the run”)

Create video content for your business in under 30 mins

Here is a guide for all you small business owners looking at changing up your communications. Video content is said to explode with  and by 2019, video content will be the driving factor behind 85% of search traffic in the US (I assume in Australia will follow the same trend)

I don’t know about you but my forays into Facebook and Instagram Videos – Lives or otherwise, leave me cringing. I know we always judge ourselves harsher than anyone else, but I definitely have room for improvement!

The recommendations are for “viral content that millenials love to share”. I don’t know about you, but I’m going to need a combination of luck, practice and a hefty bag of dollarydoos to invest in production for create something seen the world over, but we have to start somewhere right. 

Sometimes I find it hard to exactly and succinctly explain what we do. I mean, sure, in simple terms we create delicious ice treats. However when we start working


  • Do you want us to come along to your event?
  • Do you want us to serve your guests on your behalf?
  • Do you want us to sell the pops at at event?
  • Are you fundraising? Do you want us to donate a % of sales back to your organisation? Would you like to make more money and choose our fundraising package where we set you up for success with one of our carts and you sell?
  • Wedding? Which set up? Serve after the ceremony or as part of dessert? Do you want custom flavours or engraved sticks?
  • Corporate event? Would you like us to match to a colour theme or brand? Do you want a branded menu board, or cart or even more? Need a message on the menu board? Do you need a custom pop created?
  • Wholesale customer? Sure! Who are your customers? Let us choose the perfect selection of flavours for them. Need promotional material? What about a branded freezer
  • Which set up do you like? Do you have a preference – Vintage Van, Retro Cart or Portable Freezer?
  • Just want pops for home? Sure, jump online and shop away. 

…. the questions go on.

How to present all the information a customer needs so they can make a decision.

Video seemed like the perfect format.

I have had videos created in the past, but nothing I had on hand was perfect for what I needed, plus it was time for a refresh. 

I started out creating a video we could send to couples enquiring about weddings. I did not have much of a plan really, but stumbled along  the way and hacked something together that

  • Free to set up (has watermarks)
  • Hosted on Youtube and Wistia but also download as an MP4 so you can upload to social media
  • Can narrate the video
  • Has subtitles
  • Add in close captioning / subtitles (super important) 


Once you have had a bit of practice I think it would be super easy to create and upload a little video in under 30 minutes. Especially if you have an example as a template and can modify as needed. 

Below are the steps for creating your own video with automatic subtitles. 

Write your script

  • Write your draft script / story board. Keep your message short and to the point. Most people stop viewing after the one minute mark
  • When writing your script draft it to a text editor and keep it saved. You will continue to revise as you narrate, and you will use this as a base when you add your closed captions. 

Find images

  • Find images that suit your story. Landscape images are best. High resolution as possible.
  • This was quite easy in this instance – I am glad I invested in some professional photography along the way so I have some great images to choose from. I have also been blessed in being part of some stunning collaborative shoots over the years (of which I can take absolutely no styling credit for. There are lots of examples up in previous blog posts). If you have been putting off getting professional images done for your business I really recommend asking for some quotes. It’s not as expensive as you think and some photographers have packages for business start ups. You can use them all over the place – social media, Facebook Storefront, your website, sending out press releases, videos, your quotes and shared by other vendors. Jessica Wyld is our photographer of choice but there are so many other talented souls out there. If you are a lady in business, you might try looking for recommendations in a couple of Facebook Groups – Perth Girl Bosses (WA based) and also Like Minded Bitches Drinking Wine (Worldwide, but mainly east coast of Australia)
  • Make sure that you credit any images that aren’t yours. 


Create your accounts

For this I used three accounts, you’ll need to create accounts if you don’t have already

  • Adobe Spark – for your video creation. I stumbled across this and happy to say I was really impressed but it’s (free) functionality. There is a watermark in the bottom corner, and the video ends with the Adobe logo but…. in terms of being able to quickly and easily create something, it was great. Upload images easily, move the order around, narrate, add music and captions
  • Youtube – I uploaded the video to Youtube and then used the captions feature to easily transcribe, match captions to speech and then downloaded the srt file (transcription file with times and text)
  • Wistia where I could a) host the video and b) switch on automatic captions which I could not find out how to do that on Youtube. It seemed like the viewer had to manually do that. 


Create the Video

Adobe Spark is pretty easy to use. just sign up and and then follow the prompts. You can design things like images (but with Canva available why would you bother)

I would use Canva for images and PDFs and Spark for Video Content.

It’s pretty intuitive – you can choose a template to prompt you or you can fly solo. I found I chose a template in the beginning but I have done it a few times I just select the “Make Up My Own”

The feature I really love is the Voice Recording feature so you can narrate easily. Spark then automatically sets the length of the image to the length of your recording – what I don’t love is having to hear my voice (shudder! But who does!)

A couple of tips

  1. You’ll need a bit of practice to feel comfortable and to allow it to flow easily. You can easily play the recording back and then redo if you don’t like
  2. Slow your voice down (but still sound as natural as you can) and enunciate – you’ll just need a bit of practice with this til you find what you are comfortable with. I found if I spoke to fast I would sometimes get a glitch in the sound – not sure if it was my computer or the program
  3. Leave your finger on the button for a second or two at the end so that there is a pause between your sentences/images. You’ll see what I mean.

Download MP4 and upload to Youtube

Once you are happy with the video you’ll want to download it, then upload it into your Youtube channel, and set us public.

I don’t know if it’s just me or if Youtube is not very intuitive but I can never easily find how to upload to my channel. The only trick I have is to click aimlessly for a while, swear a couple of times and then it seems to magically appear.

You want to persevere though. 

Click the little video camera and then upload the video. 

As it’s uploading add in the title, description and tags. Set the tumbnail and then publish.

Transcribe speech and add captions in Youtube

Go into video editor and then select “Subtitles/CC”, choose English (or whatever you like) from the drop down menu.

Then you can press play, start typing and whenever you stop the recording will stop. It’s super easy.

If you typed out your video script (hot tip) and recorded it word for word then you can copy and paste. 

When you are finished typing then hit “set timings”.


They may not be exact, so you can then adjust as you need. 

Download SRT File

This is what you are really chasing. Youtube is easy to transcribe and set timings and then you want to be able to download the .srt file. 

So in the video editor hit “English”

Then on the next screen hit >Actions and then >.srt

I could not find a way to automatically have Youtube play the captions which is why I wanted to download the .srt file and then upload the video and .srt file to Wistia and host it all there. If you see our website then you will notice the videos are all hosted by Wistia and not Youtube. The formatting also looks cleaner and nicer. 

Upload Video and SRT to Wistia

Sign into your Wistia account and upload the video. Note that you can only host a few videos on the plan before you start paying. 

Once your video is uploaded, then go to > Video Actions > Customize 


A menu bar will appear on the left hand side. Click on Captions and more options will dropdown. 

Select upload captions. Once the captions are uploaded then wait for a bit and you can go back in and select “Captions on by default”

Now you should be ready to go!

When you want to start using then use the “Embed” button to get the code you will need to use. 


How I’ll use the video

I still have a way to go – in terms of testing responses and engagement (don’t want to do all this work for nothing), but my aim is ti slowly transition over to lots more explainer videos. 

Say for weddings, I will have a video as part of our Sales Page, but also to explain the different options a client can choose from when they ask for a quote. 

We have lots of different options and so our quotes were quite text heavy. Hopefully this way we can convey the same information in a one / one and a half minute video with good visuals to make it easier for people to understand. 

Using the same video as a base, I can

  • Cut little sections to make Social Media Content
  • Alter for our “non-wedding” clients – basically all the same information and pricing, but I change the script and some of the images so it’s not wedding focused.
  • I think I might even try and use this to send a personalised pitch for when we get really big enquiries.

The .srt file could also be pasted underneath a video (if appropriate) on your website and this can help with SEO. Lots of interviewers seem to do this (but only do this if it is appropriate)

There’s lots to explore in this realm – hopefully it helps! This is a DIY hack to get you started, and then in the future it may be appropriate.

In the first instance, you’ll find that creating this video will probably take you longer than an hour, as you write your script, find images and sign up for accounts. Once you’ve done it a couple of times you’ll be able to smash them out pretty quickly.


Final Thoughts

To make it easier on yourself and project a great image I would suggest that you use professional photography taken specifically for your business. We have always used the talented Jessica Wyld but you should easily be able to find your own. 

Jess has:

  • taken images of “Delish Ice in Action” at weddings and events
  • Deep etched images of our pops
  • Styled photos of our pops. 

If you have been holding back thinking you can’t afford it, then I’d suggest going and getting some quotes. You would be surprised I think. It’s worth it. You can use the images for quotes, Social Media Content, your website, videos and promotion.

Protein Pops + Harnessing your energy

⚡How’s your energy? ⚡
I learnt how important energy is the hard way. 
Seems kinda obvious but too much hustle, too much stress (for me) lead to eating poorly, empty calories, a roller coaster of sugar and caffeine crashes. It just exacerbates the problem 
Sometimes no one can tell you … you have to learn the lesson yourself .. and I did.
I started to see how my lack of energy was affecting every area of my life … relationships, business, my relationship with myself, dreams for the future.
Slowly slowly.. eating better (thanks @jessica_lowe_coaching and her Dinner Club (check it out!)), moving (find your kind of movement that suits you), mindset work (meditation, journalling, affirmations, visualisations) I reclaimed my energy …and everything around me got brighter and easier.
I was fortunate that Jess is actually in my Mother’s Group – and we hit it off, and so over the last 11 months juggling a business and being a mum she’s been a source of motivation to look at what I am eating to help give me energy and get through the day as well as the power of movement. 
The thing that I love about Jess’s Dinner Club is that it’s not just recipes “here, eat this” you can choose from recipes that are tailored to your goals as well as providing invaluable nutritional information so that you can start to make your own decisions about what to eat. 
I asked Jess if she would give us some tips on what to eat to keep energy levels up:
1. Select complex carbohydrates (low GI) over simple carbohydrates (high GI) for a consistent release of energy! Meaning no more highs and lows.
2. If exercising always have a pre-workout snack and select easy digestible complex carbohydrates, such as bananas because they convert to energy much quicker and with the added benefits of Vit B & Potassium you’ll feel like a super hero! 
3. Eat balanced meals that contain a good balance of all 3 macro-nutrient groups (carbs, fats & protein) 
4. Don’t wait to be over hungry before you eat, try adopt healthy eating habits and eat at least 3 healthy balanced meals every day. 
5. Ensure you always eat protein with every meal, especially on the days you exercise. Protein is the building blocks for our tissue, cells & muscle, without a diet high in protein we can not build and repair lean muscle leaning to muscle fatigue. I always suggest having a protein rich post workout snack like a Protein shake or a Delish Ice Protein Pop!  
That’s why I love these protein pops so much.. life is still busy, but I truly realise the importance of eating well (duh). I grab these as a filling snack on the run (or two for lunch!) or they are a “sweet ice cream” treat I can feel good about.

Poptail Recipe: Mango Gin and Tonic with Black Pepper

When I say Mango + Gin + Tonic + Black Pepper …. how does that flavour combo feel to you? 

On paper, I think it sounds a bit strange, but to me it feels like it might work. 

And it does. Do you know why? 

Drinks scientist Stuart Bale was commissioned by the gin brand Gin Mare to find the perfect garnish for a G & T. Story goes he tried 120 different combinations before finding that it was Mango with a twist of black pepper that was the perfect match.

Not lemon, not lime?

Well actually, both juniper (the main botanical in gin), mango and black pepper all contain relatively high amounts of a chemical compound called pinene – so when all mixed together there is a flavour explosion in your mouth. #winning #blessed

(PS pinene can also be found in pin conifer trees, orange peels, turpentine, pine needles, rosemary, dill, basil, parsley and cannabis …. but let’s just keep it simple .. and legal today).

He goes on to recommend that if you are going to use lemon or lime (lime tends to be more trendy) that you should opt for lemon. Reason being that the majority of gins have lemon notes not lime. hmmmm might have to rethink things!

In any case, I use lime in this recipe as a) that’s all I had b) I read this after I made the recipe c) I still think lime feels like the better choice for me. 


Here is my recipe for :

Mango Gin and Tonic with Black Pepper poptails

This is for 8 x 85ml moulds 


60ml Gin (we used The Botanist Gin – Islay Dry Gin)

400ml Tonic (regular old tonic if that’s all you’ve got, otherwise try something like Fever-tree)

170ml Mango

3g Cracked Black Pepper (adjust to taste)

10g Sugar 

15ml Hot Water

Squeeze of Lime



Puree the mango and set aside in a bowl. Measure out the tonic and slowly pour into the puree and use a whisk to combine. If you add them both together fully at the same time the mango will clump together and not mix properly.

Add gin to the tonic and mango mix

In a small cup add 10g sugar (this is to taste so adjust to your preference) and a splash (if you want to be accurate say 15ml) of hot water and stir til dissolved. 

Add to gin, tonic and mango. 

Stir in black pepper and squeeze in lime to taste.

Adjust black pepper and lime until you are happy with it. 

Pour into moulds, and put in the freezer overnight. 

Hopefully there is some mix left over and you can pour into a glass, add some ice, a bit more gin and a squeeze of lime and cracked pepper and get a head start!


Substitute the black pepper for freshly grated ginger for a Mango Ginger Fizz.


As you probably know alcohol doesn’t freeze. So when constructing poptails we need to be mindful of how much alcohol and sugar we use. As a rule of thumb I try not to use any more than 8-10% of alcohol by volume. Therefore in a 85ml mould you might use around 7.5ml or so. 

When looking for cocktails for inspiration I look for long cocktails – sadly – my favourite cocktails tend to be shorty boozy ones – won’t work.

Mango and Black Pepper Gin and Tonic


  • 1 cup ice
  • 1/2 cup gin
  • 1 1/2 cups tonic water
  • 2 thick slices of mango
  • good grinding of black pepper
  • 2 sprigs of mint



  1. Add the ice to two glasses and then pour over the gin.
  2. Pour over the tonic water and garnish each glass with a mango slice a good grinding of black pepper and a sprig of mint.
